Ingredients

  • 1 pack Silver Fern Farms Beef Brisket
  • 1 sachet Silver Fern Farms Beef Brisket Seasoning
  • 100g smoky BBQ sauce
  • 3 tbsp Worcester sauce
  • 1 tbsp maple syrup
  • Splash of water
  • Home-made potato wedges, pickles, slaw and mustard aioli for dipping (to serve)

Method

Preheat your oven to 140°C (130°C fan-bake).

Season the Silver Fern Farms Beef Brisket on all sides with the Silver Fern Farms Beef Brisket Seasoning and lightly sear on all sides in a large frypan. The brisket can be seasoned the day before for stronger flavour notes.

Place the brisket on a large strip of foil lined with baking paper. Brush the Worcester sauce and maple syrup all over the meat, add splash of water and then wrap the foil around the Brisket, sealing it as tightly as possible.

Bake in the preheated oven for 5–6 hours, or until the Brisket is perfectly tender. Remove the brisket from the oven and unwrap the foil. Brush the brisket with the smoky BBQ sauce, then place back in the oven uncovered to allow the sauce to form a crust. The sauce will burn quickly, so only leave for a few minutes. Apply more sauce if necessary and repeat.

Remove from the oven and let the brisket rest for 10 minutes. Pull the brisket apart with two forks or slice into strips.

Serve with home-made potato wedges, pickles, slaw and mustard aioli to dip.
